Crystallum Wines: Finlayson Pinot and Chardonnay, not a walk-in farm

Crystallum is a family-run, privately owned winery based in the Walker Bay region of South Africa. It is led by brothers Peter-Allan Finlayson (winemaker) and Andrew Finlayson (vineyards)—the third generation of Finlayson winemakers and sons of Peter Finlayson, who pioneered Pinot Noir in the Hemel-en-Aarde (notably through Hamilton Russell Vineyards and later Bouchard Finlayson).

If your Hemel-en-Aarde map lists Crystallum next to open tasting rooms, do not schedule it as a public cellar-door stop. Crystallum does not publish walk-in tasting hours. Access for tasting is framed through the Wine Club: members are welcomed for private tastings with Peter-Allan Finlayson. Enquiries and waiting-list requests go to teresa@crystallumwines.com.

Official website note

The live official site is https://www.crystallumwines.com/ (Squarespace). The alternate hostname crystallum.co.za did not resolve in research checks on 2026-10-01—use crystallumwines.com for club, story, and wine pages.

History and focus

Crystallum was founded in 2007, initially producing a little over four thousand bottles of Sauvignon Blanc. From the following vintage the brothers introduced Pinot Noir and Chardonnay, and the house now works exclusively with these Burgundian varieties—multi-vineyard blends and single-vineyard bottlings. That narrow focus is the brand’s identity: cool-climate Walker Bay / greater Cape South Coast fruit, small volumes, and a deliberate refusal to chase a broad tourist portfolio.

Peter-Allan’s published philosophy balances old-world methods with vineyard-led decisions: “nurture what comes off the vines rather than manipulating the fruit to fit a predetermined outcome.”

Winemaking approach (as published)

Official wine-page copy states:

  • Low intervention; native yeasts only for fermentation.
  • Pinot Noir — fermented in small stainless-steel tanks; aged in French oak for 11–16 months before bottling.
  • Chardonnay — whole-bunch pressed; fermented in barrel and remains there for 11 months before bottling.
  • All fruit hand-picked into small crates.

These are process facts from Crystallum, not invented tasting notes. Independent merchants (for example Berry Bros. & Rudd and Skurnik) echo the boutique scale and Finlayson lineage; treat merchant scores as secondary colour, not as substitute for farm access.

Signature wines (range names)

Published Crystallum labels include:

Pinot Noir: Peter Max; Cuvée Cinéma; Litigo; Mabalel.

Chardonnay: Ferrum; Clay Shales; The Agnes.

Single-vineyard and multi-vineyard cuvées sit inside this list; availability is limited and often prioritised to club members and specialist trade. Fruit sources historically span Hemel-en-Aarde and other cool Walker Bay / Cape South Coast sites (merchant notes mention parcels such as Elandskloof for certain Pinots)—confirm current vineyard names on the latest release notes rather than assuming a single-estate map pin.

Wine Club: how private access works

Crystallum’s Wine Club is the structured path for collectors and for anyone hoping to taste at the winery:

  • Guaranteed two mixed cases of single-vineyard wines per year.
  • Discounts on the usual range and priority ordering on limited releases.
  • Welcome at the winery for private tastings with Peter-Allan Finlayson.
  • Occasional mailers: after harvest (when The Agnes & Peter Max become available) and again in July for latest single-vineyard releases, with case contents detailed then.

Why itinerary planners get this wrong

Walker Bay and Hemel-en-Aarde directories often list every recognised Pinot producer as if each had a deck and a spit bucket. Crystallum’s model is closer to a boutique grower brand with club hospitality than to Creation-style daily tourism. Scheduling Crystallum as an open farm wastes drive time and creates false expectations for guests.

Practical alternatives on the same cool-climate theme: book Creation or other Hemel-en-Aarde estates that publish hours; buy Crystallum through specialist merchants or the club; arrange private tasting only after Teresa confirms.

Place in Walker Bay’s Pinot story

The Finlayson family name is inseparable from Hemel-en-Aarde Pinot history. Crystallum continues that thread in a third-generation, Pinot-and-Chardonnay-only project rather than as a multi-varietal visitor centre. For visitor guides, the honest framing is: world-class Walker Bay Burgundian wines; private / club access; no public walk-in.

Buying without a cellar door

Because Crystallum is not a walk-in destination, most visitors encounter the wines through specialist merchants, restaurants, and the club allocation. International trade coverage (United Kingdom and United States importers among them) repeatedly stresses minuscule yields and cool Walker Bay growing seasons that lengthen flavour development for Pinot Noir and Chardonnay. That scarcity is a feature of the brand, not a temporary stock-out.

If you are researching Hemel-en-Aarde Pinot lineage, it helps to keep the three Finlayson-linked chapters distinct: Hamilton Russell Vineyards (Peter Finlayson’s pioneering era), Bouchard Finlayson (his ongoing project with Burgundy links), and Crystallum (the sons’ Pinot-and-Chardonnay-only house from 2007). Confusing those brands on a map or tasting sheet is a common itinerary error.

Practical checklist before you email Teresa

  • State that you understand there is no public walk-in.
  • Say whether you want Wine Club membership, a waiting-list place, or a one-off private tasting if available to members.
  • Name which cuvées interest you (Peter Max, Cuvée Cinéma, Litigo, Mabalel, Ferrum, Clay Shales, The Agnes).
  • Give party size and travel dates around Walker Bay / Hermanus.
  • Use teresa@crystallumwines.com only—do not invent a tasting-room phone number.
