Kanonkop Wine Estate: Simonsberg-Stellenbosch Pinotage and Paul Sauer

Kanonkop Wine Estate rises on the foothills of the Simonsberg in the Simonsberg-Stellenbosch ward—and for many critics and collectors it is the South African equivalent of a First Growth. This Stellenbosch wine estate is inseparable from two stories: Pinotage at its most serious, and Paul Sauer, a Cabernet-led Bordeaux blend that routinely anchors conversations about the Cape’s greatest reds. Visiting Kanonkop on the South Africa wine route is less about entertainment infrastructure and more about standing where dryland bush vines, decomposed granite and cool Atlantic air have shaped a national benchmark.

Overview and history

The farm takes its name from the hill where a cannon once signalled ships in Table Bay—an evocative local legend that still colours the brand. Paul Sauer, a towering figure in Cape public life and a student of viticulture under Professor Abraham Izak Perold (the creator of Pinotage), established vineyards on land that had formed part of the wider Uitkyk property. Pinotage was among the early plantings; the 1953 dryland bush-vine block that now feeds Black Label Pinotage is among the variety’s oldest surviving parcels anywhere.

For decades fruit and wine flowed into larger Stellenbosch Farmers’ Winery brands. That changed in 1973, when Sauer’s son-in-law Jannie Krige and winemaker Jan Boland Coetzee bottled the first wines under the Kanonkop label—Cabernet Sauvignon and Pinotage among them. Beyers Truter arrived ahead of the 1981 vintage, introduced Paul Sauer the same year, and in 1991 won the IWSC Robert Mondavi Trophy as International Winemaker of the Year on the strength of the 1989 Pinotage—an inflection point for both estate and cultivar. Abrie Beeslaar later refined rather than reinvented the style; today brothers Johann and Paul Krige continue fourth-generation family ownership, with the winemaking baton passed to a new generation of cellar leadership. Tim Atkin MW’s perfect 100-point score for the 2015 Paul Sauer underlined how far the estate’s reds reach on the world stage.

Terroir and location

Kanonkop’s coordinates near 33.85°S, 18.85°E place it on classic Simonsberg-Stellenbosch slopes of ancient decomposed granite. Old dryland (largely unirrigated) vineyards force deep rooting and natural yield control. Cool air off the Atlantic tempers summer heat, preserving acidity in thick-skinned reds. Roughly half the plantings are Pinotage—an unusually high commitment for a fine-wine address—and the remainder focuses on Bordeaux varieties that feed Paul Sauer and related bottlings. The landscape is beautiful but purposeful: this is a farm organised around red-wine excellence rather than sprawling leisure amenities.

Signature wines and styles

Paul Sauer—typically Cabernet Sauvignon with Merlot and Cabernet Franc—is the estate’s Bordeaux-blend icon, built for long cellaring and released with the confidence of a grand vin. Kanonkop Pinotage remains a global reference for the variety: dark fruit, spice, firm but ripe tannin, and ageing grace. At the apex sits Black Label Pinotage, from the 1953 bush vines, produced in tiny volumes that often sell out on release. The more accessible Kadette range, including Cape Blend styles that marry Pinotage with Bordeaux grapes, opens the door for everyday drinking without abandoning house DNA. Expect red-wine focus throughout; whites are not the point of a Kanonkop visit.

Visitor experience

Kanonkop welcomes visitors Monday to Saturday and on selected public holidays for structured tastings that showcase Pinotage, Paul Sauer and Kadette wines in a setting that emphasises hospitality and family tradition as much as score sheets. Staff are accustomed to both first-time Pinotage drinkers and collectors chasing library bottles. Join the wine club for member discounts and earlier access to new vintages. Book ahead in high season; this is one of the most sought-after cellar doors on any Stellenbosch itinerary.

Why visit Kanonkop

  • Widely regarded South African “First Growth” stature with the wines to match.
  • Spiritual home of serious Pinotage, including legendary old-vine Black Label.
  • Paul Sauer—among the Cape’s most collected Bordeaux-style blends.
  • Authentic Simonsberg-Stellenbosch granite terroir and dryland vineyards.
  • Essential stop on any South Africa wine route focused on red-wine heritage.

Practical visit tips

Approach via the R44 corridor north of Stellenbosch toward Simonsberg estates; confirm exact gate and parking instructions when booking. Allow unhurried tasting time—Paul Sauer and Pinotage both reward slow attention and food pairing later in town or at a neighbouring restaurant. Combine with other Simonsberg-Stellenbosch addresses rather than distant Helderberg farms on the same short outing. Check kanonkop.co.za for current hours, tasting fees and club releases. If your Stellenbosch wine estate shortlist has room for only one Pinotage pilgrimage, Kanonkop is the name most professionals still speak first.

Photographers and history buffs should ask about the cannon-hill story and the 1953 Pinotage block’s significance; even a brief conversation with tasting-room staff deepens appreciation of why this Stellenbosch wine estate occupies such a singular place in Cape wine lore. Cellaring tip: Paul Sauer and estate Pinotage both repay five to fifteen years when stored well—buy a case if allocations allow.
